On August 21, Barbara-Jo's Books to Cooks had the pleasure of hosting a reception for Pam Anderson and her recently released book, The Perfect Recipe for Losing Weight and Eating Great. Pam shared many tips and pointers on shedding weight while still enjoying a variety of delicious and exciting foods. Her book gives readers sound advice about exercise, sensible eating and staying healthy.
One of the recipes served at the reception was this savoury-sweet nut mixture. Pam suggests that these nuts are great with a glass of wine or chopped and added to salads.

2 pounds (about 6 cups) premium roasted salted mixed nuts
8 ounces (about 1 2/3 cups) roasted salted pistachios
1 tablespoon butter
1/4 cup minced fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
1 teaspoon kosher salt
Adjust oven rack to middle position and heat oven to 325 degrees [F].
Spread nuts on a large (18-by-12-inch) baking sheet in a single layer. Roast, stirring occasionally, until fragrant and very hot, about 10 minutes.
Meanwhile, microwave butter in a medium microwave-safe bowl until melted [or place in a small saucepan over low heat until melted]. Stir in rosemary, cayenne, sugar and salt. Pour hot nuts into a large bowl. Add rosemary mixture and stir until completely coated. Pour nuts back onto baking sheet and spread in a single layer to cool. Serve warm or at room temperature. (Nuts can be stored in an airtight container for about 1 month)
