Sunday Supper Goes to Greece
Recently, the Sunday Supper series enjoyed a delightful culinary journey to Greece. The four course dinner was a family affair, prepared and hosted by the mother and son team of Georgia and Harry Kambolis. Their philosophy? Use the best ingredients and "keep it simple."
The Kambolis name is well known to generations of Vancouver diners as the culinary dynasty behind such well-loved restaurants as Raincity Grill, C and - most recently - Gastown's Nu Greek restaurant.
The classic menu - complete with step-by-step instructions in preparation by Georgia - included an appetizer of Spinach and Feta Phyllo Triangles followed by Greek Salad with Tzatziki and Georgia's tips for making the most tender octopus I've ever tasted. Guests were also treated to an abundance of freshly-baked pita bread, hot from the shop's oven.
The main course was Greek Roasted Lamb with Herb Roast Potatoes followed by Baklava - the perfect dessert to finish off the evening. One guest summed up the event with: "This is the best Greek food I've ever eaten." The only thing better? The warmth, generosity and family stories that were an integral part of each course.
