A Lighthearted Evening with Anne Lindsay...
As the Olympics drew to a close we were ready to return to more culinary diversions and it was with great pleasure that we welcomed Anne Lindsay to our shop to toast the release of her newest cookbook,
Lighthearted at Home, published with the Heart & Stroke Foundation
. It's hard to believe that Anne has been sharing her recipes for healthy, good food for over 25 years. Anne has published 5 bestselling cookbooks and I think it's safe to say that there is at least one copy of well-used Anne Lindsay cookbook in most every Canadian home - the doctor may have recommended her books but the great recipes kept us coming back for more. And, we're certainly the healthier for it.
Anne prepared a salsa with black bean and corn salsa with tomatoes and avocado. A real 'crowd pleaser' that is light, colourful, easy to prepare and full of fresh flavours - like many of her standards. Anne shared a few 'lighthearted tips' with us too like this one - 'rinse your canned beans and you will eliminate most of the sodium content from them, along with the 'gassy' element'. Good, simple advice. We also sampled 'Hermit Cookies' - delicious, and with only 1/3 cup sugar in the whole a batch they are a true guilt-free pleasure.
